PR? Also, once I get the Canadian PR, how long does it take to get the

There is no canadian "green card"
If you become Canadian Permanent Resident then you will most likely lose
your US Green Card. More - it is not only obtaining Canadian PR status what
is needed to sponsor your spouse later - you will need to live and earn
income in Canada in order to be eligible to sponsor anyone.
Could the person not include the spouse in her or his own application
for Canadian permanent residency?
Yes, person not only can but must include spouse in the application,
accompanying or not.
But the original poster is not married yet and wants to get married after
s/he can sponsor the spouse.
