The green card doesn't help or hinder you at all. You would still need
to obtain the appropriate visas (if necessary) for those countries as
if you only had a Chinese passport.
The only difference might be if you travelled to a country forbidden
by the US State Department (e.g. Cuba.) In such a case, it *might* be
that having a Green Card legally prevents you from visiting, though
I'm not sure about this.
Actually, that's kind of an interesting question. Can a LPR visit Cuba
or is he subject to the same restrictions as a USC?

Your green
card will *only* be useful when you return to the US, it will not help
you in any other country. You should be fine with HongKong and Taiwan
using your Chinese passport, but some European countries will still
require a visa to visit. Remember, your green card is *not* a US
passport.
There are a *few* countries that (although they normally require citizens of
another country to have a visa) will allow visa free entry if the individual
has a greencard e.g. Switzerland.
