1) Isn't this timeline unusually fast for getting an AOS/485 Interview?
2) What is the purpose of the interview? Is it in the hands of one
person? What makes or breaks it? I'll be attending mine with a lawyer.
3) What documents must I ABSOLUTELY hell or high water have with me?

Situation: 10+ year resident of the US, direct application (I'm my own
sponsor), went to high school and college here, no family in my native
country (parents live in Europe), own no assetts or houses in native
country, never arrested.

I'm applying for a green card.
Sent out applications in April, it got "rejected" twice for some sort
of procedure we supposedly didn't do, then got accepted the third time
in June. Did Biometrics in August, received Work Permit yesterday, and
have an interview at the end of this month.
My questions are:

What's the basis for your green card eligibility? Is it through
marriage to a USC? Employment-based? What was your status for the 10+
years you were here? I haven't heard of anyone being their own sponsor
for a green card, but then again I'm not a lawyer. Perhaps this is
possible somehow.
When you say "we", who do you mean?
Yes, but it's non unheard of.
The purpose of the interview is for the officer to determine whether
you qualify to receive PR status in the USA. What makes it, is if you
do indeed qualify. What breaks it is if the officer finds something
that disqualifies you. I'm surprised your lawyer didn't go over all
this with you.
EVERYTHING that is related to your status here during those 10+ years,
everything immigration-related, originals of anything you sent a copy
of, etc. Usually the interview notice letter has a big long list of
items you MUST bring, and items you SHOULD bring. Bring everything.
Again, I'm a bit surprised your lawyer hasn't advised you on any
of this....
